Basically, Kombucha is a sweetened tea that is fermented with a “SCOBY” (which stands for a symbiotic colony of bacteria and yeast). Yum, right? But, it becomes a nutrient-rich and low-sugar beverage. The fermentation process usually takes 7-12 days (depending on temperature and the strength of your SCOBY) and it requires the use of over 90% of the sugar in the whole process!

This process is similar to what would happen in sourdough bread or milk/water kefir.  It contains a variety of vitamins, minerals and enzymes and has been prized by traditional cultures for its health-promoting properties.

Kombucha is actually an incredible detoxifying drink! During the fermentation process, the glucuronic acid is formed (normally only produced by the liver to neutralize toxins in the body). Additional glucuronic acid taken in the form of kombucha is said to be a powerful aid to the body’s natural cleaning process. It boosts your immune system and is a proven prophylactic against cancer and other degenerative diseases. It is a delicious refreshing drink for a hot summer day!

Drinks like Kombucha, Water Kefir, Milk Kefir, and fermented foods like sauerkraut contain billions of very beneficial bacteria, enzymes and acids that help keep your gut in balance. And y’all know how important I think good bacteria are for your health. So, by eating/drinking these you can reduce your need to take probiotic supplements separately. You can get great probiotics from your food.

My good friend, Dr. Mandy Warren, from Fayetteville, Arkansas started her own craft Kombucha company!  We’re having samples of JR’s Kombucha in the office this week, so be sure you get some when you come to get adjusted!  Here is Dr. Mandy’s how-to video in case you ever wanted to try making it yourself:   https://eatinginnately.com/?p=33
