If you’ve been to our Eat Well workshop, you’ll know for the past 3 years we’ve been doing olive oil tastings because of the incredible benefits that early-harvested olive oil has on our health!  Early harvest olive oil has these incredible compounds call phenols that I want to talk about today.  Oleocanthal is the anti-cancer and neuroprotective phenolic compound that is created at the point of the crushing of the olives, meaning you can’t get it any other way than by consuming the oil produced by the crushing and it must be from early harvest, not late.  

Secondly, I want you to know about another phenolic compound in early-harvest olive oil called Oleuropein.  What makes this one so special is that it can activate a systemic effect in the body called “autophagy,” which is our body’s clean-up mechanism while fasting.  But, the cool thing about using early-harvest, high-phenolic olive oil is that it can help your body do the clean-up without having to be in a long-term fast.  You’d get even more incredible effects from it if you were fasting and just added the early-harvest, high-phenolic olive oil as a supplement when fasting, however, you could still take it as this really amazing anti-cancer, brain boosting, body clean-up.  

You might wonder why I’m specifying “early-harvest, high-phenolic olive oil,”—It’s because NOT all olive oils are created equal.  Late harvest olive oil doesn’t contain these compounds, and certainly cheap olive oil that’s been unknowingly diluted wth other unhealthy oils doesn’t either. So, for these amazing benefits—you have to get the good stuff!  It should be very peppery in flavor and that little burn at the back of your throat tells you it’s the right stuff.
